K Pilota is a white wine produced by Bodega K5 in Aia, near Zarautz, D.O. Getariako Txakolina.
Bodega K5 is a project created by 5 friends, among which we can find Karlos Arguiñano, one of the most popular cooks in Euskadi. Both the vineyard and the winery are located in a spectacular site, with views of the Cantabrian Sea, surrounded by woods and on granitic soils. The variety they cultivate is the local Hondarribi Zuri.
K Pilota is a wine made from 100% Hondarribi Zuri, from a vineyard planted in espalier, situated 300 metres above the level of the Cantabrian Sea. Soils are formed by schists of laminated slate and granite.
Harvesting is carried out manually, selecting the grapes in the vineyard. Once they arrived at the winery, they undergo pre-fermentation maceration. They ferment in stainless steel deposits with local yeasts and they are aged for 11 months on their lees, also in stainless steel deposits.
