Characteristics of Juan Rojo
Juan Rojo is a red wine from Toro, produced by Bodegas y Pagos Matarredonda, a winery that was founded in 2001 after falling in love in 1998 with the vineyards of the El Pego.
The climate in this area is extremely continental with Atlantic influences, arid character. It is characterized by an average annual temperature of 12-13ºC, with minimum and maximums of -11ºC and 37 ° C. As we can see, the temperature variation is large, promoting the maturation of the grapes. This wine is a varietal Tinta de Toro (100%) from old vines from the El Pego (Zamora), planted 700 metres above sea level. In terms of processing, a cold maceration is carried out for 5-7 days and alcoholic fermentation occurs in a spontaneous manner by pumping twice a day. Subsequently, a post-fermentation maceration of 7 days and a second fermentation (malolactic) is done in barrels. Finally, Juan Rojo spends 8 months in French oak barrels from Allier and a minimum of 12 months in the bottle before marketing.
