Joseph Drouhin is a winery founded in the late nineteenth century and located in Beaune. It owns 78 hectares of vineyards distributed over various subareas of Burgundy but also acts as negociant, buying grapes and must from local producers. For years the winery has been practicing organic farming because it understands that listening and respecting its vineyards and nature is the right way to make quality wines.
The vineyards for Joseph Drouhin Petit Chablis lie in the north of Burgundy. They have an average density per hectare of 6,250 plants, are pruned in double Guyot style and produce very few grapes, to ensure that the latter are balanced.
The Joseph Drouhin Petit Chablis harvest is gently pressed and fermented in stainless steel tanks. Once fermented, it is aged on lees for 7 to 8 months.
