Jonathan Didier Pabiot Pouilly-fumé Florilège

Jonathan Didier Pabiot Pouilly-Fumé Florilège is a white wine made with the Sauvignon Blanc variety by Jonathan Didier Pabiot in the A.O.C. Pouilly Fumé, in the Loire Valley, France.

The Jonathan Didier Pabiot Pouilly-Fumé Florilège wine is made using clusters that come from vines aged around 30 years old, growing in vineyards cultivated according to the principles of organic and biodynamic agriculture. The soils are predominantly very poor and made up of flint and marl.

The must ferments with its native yeasts in stainless steel tanks and the resulting wine undergoes a 5-month aging on its fine lees before being bottled ready for sale.

Jonathan Didier Pabiot comes from a family of winegrowers and is currently one of the most interesting producers in Pouilly-Fumé. He was the driving force behind implementing the biodynamic methods that are now used to cultivate the 20 hectares of his Domaine. His work of maximum respect for the environment and minimal intervention in the vineyard and winery, where sulphites are hardly used, is reflected in the frank and direct personality of the excellent wines he produces.
