Jambon La Tranche de Chenas is a natural red wine produced by Philippe Jambon. It is a monovarietal Gamay from Beaujolais.
Philippe Jambon is a small winery that was founded in 1997 in the town of Chasselas, in the north of Beaujolais. It has been a pioneering and visionary winery that began to pamper and cultivate Gamay some time ago in a way that is far removed from the large-scale productions sought by other winegrowers. It works with organic vineyards, and does not use sulphur or wine products to produce its wines.
The grapes for Jambon La Tranche de Chenas undergo a semi-carbonaceous maceration, vatting part of the grapes whole and without destemming, and the rest destemmed and crushed. Once fermented, the final wine is aged for 12 months in 500 litre used oak barrels to ensure that the wine evolves but does not end up being over-influenced by the wood.
Jambon La Tranche de Chenas is a natural Gamay wine pampered in the field, which gives us a lot of fruit and freshness on the palate.
