They are vineyards cared for by hand under the anthroposophist precepts of Rudolf Steiner and without the use of herbicides, pesticides or other chemical products. Harvest is carried out manually and late.
In the winery, the Hajszan Neumann Ried Wiener Gemischter Satz DAC grapes are macerated for about 6 hours and once pressed, the pre-clarified must ferments spontaneously with native yeasts in stainless steel tanks. Afterwards, part of the wine is aged in large old oak barrels and finally the two wines are mixed before bottling, without clarifying or stabilizing.
