G&V Y lo otro también Bobal is the wine project set up by Esmeralda García and Joan Valencia, two winemakers who produce in various Spanish wine regions with maximum respect and minimal intervention. As a result of this work, they make unconventional, natural wines.
The G&V Y lo otro también Bobal wine is made with Bobal vines planted in clay-calcareous soil at an altitude of 700 m. They are cultivated using sustainable agriculture, taking care of the environment and not using any chemicals that could harm the natural balance of the terroir and the vine. The grapes are harvested manually.
The G&V Y lo otro también Bobal wine is made without destemming and with spontaneous fermentation using native yeasts in an epoxy tank. Fermentation is finished off in a Georgian Kvevri for 7 months. It is finally bottled without being clarified, filtered or adding sulphites.
