Guímaro Godello is a white wine made by Adega Guímaro in the heart of D.O. Ribera Sacra.
Adega Guímaro was built at the beginning of the century. Here, wines are produced in a traditional way. In 1991, a large refurbishment was carried out. It improved its conditions and the winery is as of today one of the standards of the D.O. Ribeira Sacra.
Adega Guímaro practices an organic agriculture,respectful with its environment, always advocating for the local varieties.
Guímaro Godello is a wine made mainly from Godello. It includes 25% of other white varieties as Treixadura, Torrontés, Loureiro and Albariño. These grapes come from plots located in the area of Amandi, on steep slopes at 300 and 500 metres of altitude. Once harvested, they go through cold maceration, 4-5 °C, for 20 hours. Pressed and settled, they are left to ferment in stainless steel deposits for 15-20 days, between 12 and 14 °C. Once the fermentation is finished, it is racked and left for 6 months on its lees.
Guímaro Godello is an honest, aromatic and balsamic wine. An elegant white with lots of character.
