Gramona was founded in 1881 in Sant Sadurní d'Anoia, the epicenter of D.O. Cava. After more than 130 years of experience in producing both cavas and wines, the fifth generation is currently in charge of the business, continuing with the family tradition and the philosophy they have applied in focusing their work on the winery over the years.
Over the past few years, Gramona has evolved in terms of the way it treats its vineyards, moving into organic agriculture and biodynamics, achieving the maximum balance of the vines with their surroundings, and in doing so infusing all its wines with character and uniqueness.
As the result of observing and researching into long-aged cavas, Gramona decided to launch a new line,Enoteca Gramona, made up of two cavas, a Brut and a Brut Nature from the same vintage, where aging is taken to the extreme, making these sparkling wines with a minimum of 12 years stacked.
Gramona Enoteca Brut is a cava made from Xarello and Maccabeu grapes from their own vineyards. From theFont de Juiparaje calificado. 22.5 hectares at an altitude of 350 meters, with chalky-clay soils, sandy plates along the river and a profusion of rock in the highest and driest area. Cultivated organically and employing a biodynamic philosophy.
After being harvested manually into 20 kg boxes, all the grapes pass over the selection table in the winery. Once the grapes enter by gravity, the whole grape is gently pressed. After the first fermentation, the second fermentation takes place in the bottle, with a minimum aging of 12 years (depending on the vintage, it can be up to 20 years) stacked and with a cork stopper. After this time the stirring and disgorgement are performed manually and the winery’s centennial solera tirage liqueur is added with 3 gr/liter of sugar.
Gramona Enoteca Brut 2002 is a deep, elegant and expressive cava. A fantastic vintage that reveals a great balance between maturity and freshness. On the nose the aromas of very ripe white fruit, baked apple, dried apricots and quince stand out, with light floral notes, and an outstanding presence of the aromas of aging (15 years stacked), toast, nuts, cocoa, with a slight memory of undergrowth. On the palate it is full and silky, with a stately passage over the palate, with a fine bubble, and a lingering and lively finish.
Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
