Gorrondona Txacoli Blanco is a white wine produced by the winery Doniene Gorrondona Txacolina, in Bakio, D.O.Bizkaiko Txakolina.
Doniene Gorrondona is a winery located in the region of Bakio (The Basque Country), a valley between the mountains Sollube and Jata, both with less than 500 metres of altitude.
This farm and winery has 12 hectares of vineyards, including a unique 2-hectare plot with pre-phylloxera Hondarribi Beltza. All vineyards are located on sloping terrains, oriented towards the South. Soils are sandy in the higher areas and clayey in the lower areas of the valley.
Vines are cultivated according to the organic parameters and they are planted in a pergola shape to allow air flow in this humid climate.
The philosophy of this winery is to make unique wines with personality that express the character of the local varieties and of this special terroir.
Gorrondona Txacoli Blanco is a white wine made mostly with Hondarrabi Zuri, and also with Mune Mahatsa and 5% of other varieties. They are manually harvested and placed in boxes. Once they arrive at the winery, they are destemmed and pressed. Fermentation is carried out with local yeasts in stainless steel deposits. Cold stabilisation.

The truth is that for many centuries, nobody gave txakolí wine serious consideration, and very few mourned its disappearance. Compared to powerful wines with a higher alcohol content, txakolí was considered a ‘little’ local wine (‘vinillo’) of little interest. For a long time, a wine’s alcohol content was its only introduction. There were periods where still very poor production methods had not allowed the varieties to speak for themselves, and what’s more, txakolí forms part of a family economy at the same home-grown level as meat, milk and fish. In addition, the txacolí industry has not been advanced or prepared enough to rigorously produce this small oenological joy until the last few decades.
