Goianea Txakoli Uno, made by the Goianea winery, is a white wine made on lees with the Hondarribi Zuri and Hondarribi Zuri Zerratia native varieties in the D.O. Arabako-Txakolina (Basque Country).
La Bodega Goianea is the personal project of Jose Cruz Guinea and Jose María Gotxi. Two expert winemakers who produce quality Atlantic wines in the Arabako-Txakolina area. To do this, they start with maximum respect for the vine and minimum masking in the winery.
Goianea Txakoli One comes from their own vines planted on clay soils and in an Atlantic climate with high rainfall and moderate temperatures. They use traditional cultivation with techniques that respect the vine and the environment in general. They wait for optimum ripeness in the grapes and then harvest manually in 15 kg boxes.
In the winery, the Goianea Txakoli Uno grapes are vinified separately, depending on the plot and orientation. They are selected and gently pressed in a vertical press. Once the must is obtained, spontaneous fermentation begins with native yeasts in stainless steel tanks for 80 days. Finally, it ages on lees for 6 months with fine lees batonnage.
