Starting from scratch in Burgundy is no mean feat. However, Frédéric Cossard’s passion for wine has seen his wines gain an international reputation. He started out in 1996 with a small vineyard and now has ten hectares of the region’s best terroirs. He uses organic farming and makes his wines without additives.
Frédéric Cossard Bourgogne Rouge Bedeau comes from several plots of vines aged over forty years old around the town of Volnay. They are cultivated using ecological methods and without chemical products, instead opting for biodynamic treatments. Horses are used for the work in the vineyard and the harvest is carried out manually at the optimal point of ripeness.
To make the Frédéric Cossard Bourgogne Rouge Bedeau wine, the clusters macerate whole for about a month with their skins in open barrels, then spontaneous fermentation begins with native yeasts and the wine finally ages on lees in barrels. The wine is bottled without refining or adding sulphites.
