François Carillon Chassagne-Montrachet Premier Cru is a monovarietal Chardonnay white wine produced by Domaine François Carillon. It is a wine from the AOC Chassagne-Montrachet 1er Cru.
Domaine François Carillon is the legacy of the Carillon family, who have been in Puligny-Montrachet since the sixteenth century. Their white wines are considered by critics to be the elite of Burgundy and are found in the most prestigious restaurants around the world. They have 6.5 hectares of vineyards that they cultivate with passion using an organic approach.
To produce François Carillon Chassagne-Montrachet Premier Cru the harvest is pressed when it arrives in the cellar, and the musts are vatted for a few hours to clean them of burrs and impurities by decanting. They then go directly into oak barrels, where they undergo alcoholic fermentation and malolactic fermentation. The duration and development of these will depend on each harvest. The wines age in barrels on their lees for 12 months and undergo a light battonage to extract mannoproteins from the yeasts that form the lees and provide more body and touches of bakery to the wine. The wines are then assembled according to their needs and rest for 6 months more. Domaine François Carillon uses inert gases in almost all its operations to avoid oxidising their wines, and are thus able to use less sulphite during processing. Lastly, the wine is filtered and/or clarified if necessary and then bottled, remaining in the bottle for a while to finish stabilising before coming onto the market.
