Characteristics of Flores de Callejo
New vintage of Flores de Callejo, the youngest wine by Bodegas Félix Callejo.
The vintage 2011 is marked by a hard winter, which is usual in the D.O. Ribera del Duero, with cold months and scarce rainfall. In August and September there was also scarce rainfall, which contributed to a good ripening of the grapes' tannins. This vintage has been considered as excellent.
After a manual harvest, a strict selection of the grapes took place. The indigenous yeast starts the fermentation. Once completed, the wine is macerated on the skins for a week before being the racking. At the beginning of the year, the wine is racked into French oak barrels in which it stays for six months.
