Finca Olivardots Groc d’Àmfora is a white wine from the D.O Empordà produced by the Vinyes d’Olivardots winery. This wine is a blend of 3 different grape varieties: Garnacha Roja (40%), Garnacha Blanca (40%)and Macabeo (20%).
The native grapes used to produce Finca Olivardots Groc d’Àmfora comes from vineyards that are over 80 years old. The vineyards are located at 100 metres above sea level on one of the flattest areas of the Empordà, and are home to soils composed of granite, sand and stones.
The winery practises organic viticulture, respecting the natural processes of the area as well as looking to maximise the expression of the character and identity of the terroir. The grapes are transported to the winery after the harvest has been carried out manually using small 10kg capacity boxes, which ensures that the fruit does not break or rupture, losing its best qualities.
On entering the grapes in the winery, the vinification process begins with a first phase of cold maceration. Next fermentation is carried out, prior to the final process of aging. Olivardots Finca Groc d'Àmfora is aged in 700 litre capacity clay amphorae for four months before being bottled and marketed. This form of aging the wine was once the most widespread in the Mediterranean: but is now an underused method that gives the wine a definitely special character.
The Vinyes d'Olivardots winery was founded in 2006 and is led by husband and wife, Carme Casacuberta and Antoni Pena. Surrounded by a unique landscape formed by four hectares of vineyards, the facilities were designed to work with the aid of gravity, using modern techniques while still keeping in touch with traditional methodology.
