Exopto Cuveé Paola is a red wine produced in Rioja by the Exopto winery. Exopto Cuveé Paola is a special wine. A wine made to celebrate the birth of Paola, daughter of Tom Puyaubert, chief winemaker.
Tom Puyaubert is a French winemaker who lives in La Rioja, where he arrived to work for the famous French cooperage, Saury. In 2003 he founded the Exopto winery, and just over 10 years later it has managed to become one of the new leading brands in La Rioja.
Exopto Cuveé Paola is made from a blend of equal parts of Tempranillo and Garnacha. The grapes come from 10 hectares of old vineyards that the winery owns in the town of Abalos, in the Rioja Alta.
The harvest is done manually in small boxes of 15kg to preserve the grapes in perfect condition until their arrival in cellar. The fermentation occurs in oak casks of 1500 litres with indigenous yeasts from the vineyard itself.
Exopto Cuveé Paola spends 18 months aging in French oak barrels of 225 litres, half of them are new barrels. A red wine from La Rioja which is halfway between the modern and the traditional, with a small production of 3,000 bottles.

The main idea of his project is based on making different wines within the historic context of Rioja: wines with more colour and freshness, with better expression of the fruit, and with a finer adaptation of the oak. It is the perfect evidence of a complex balance between modernity and tradition, where the balanced assemblages of the traditional red varieties of Rioja, Tempranillo, Graciano and Grenache, comprise the expression of his wines.
