Eremitas Paulo de Tebas is an organic white wine aged in a cement tank and made by Mateus Nicolau de Almeida with the Rabigato native variety in the DOC Douro (Portugal).
Following the family tradition, Mateus Nicolau de Almeida is responsible for producing some excellent wines in the Upper Douro region. As part of his collection, he has created the Eremitas project, which involves three different versions of wine made with the Rabigato variety. Bearing in mind that all the wines in this collection are vinified in the same way, this is a very good way to showcase the richness and uniqueness of each terroir.
With Eremitas Paulo de Tebas, the grapes come from the winery’s highest altitude plots. These vines lie at 400 metres above sea level and are planted on shallow and stony soils. They are cultivated using organic agriculture with no pesticides, herbicides or chemicals that could damage the natural environment.
In the winery, the grapes are first macerated with the skins for a few hours in a “calcatórium” (granite basin). They are then pressed and the resulting Eremitas Paulo de Tebas must ferments spontaneously in concrete tanks without temperature control for 12 months.
In a tribute to the desert monks, Eremitas Paulo de Tebas is made through patience and dedication. Like these Christian hermits seeking enlightenment through meditation, this white wine is the result of pure, authentic and uninterrupted work.
