Enrique Mendoza Santa Rosa is a red wine from the D.O. Alicante produced by the Enrique Mendoza winery. This wine is a blend of Cabernet Sauvignon (95%), Merlot (15%) and Syrah (15%).
The grapes are selected from the estate's vineyards in Chaconero, in Villena. After the harvest, the whole berries are put into barrels and fermented with natural yeast for the wine to develop a greater depth. The fermentation of the must is carried out at a controlled temperature of 28ºC. During this phase, they carry out small and frequent daily processes of 'pumping over'.
After finishing all of the vinification phases, Enrique Mendoza Santa Rosa ages for 17 months in new French oak barrels from Allier.
