Emilio Valerio La Merced is a varietal Malvasia. The grapes come from vineyards cultivated according to the principles of biodynamic agriculture, a less interventionist agriculture, where livestock are used, for example, natural fertilization by the supply of compost.
The wine undergoes malolactic fermentation in wooden barrels for a month and a half. After the fermentation, it is aged for 6 months in barrels on its lees.
