Characteristics of El Perro Verde
El Perro Verde is a white wine from Rueda developed by Angel Lorenzo and his son Javier Cachazo in collaboration with Vila Viniteca. This is one of the Uvas Felices projects. This wine is a varietal Verdejo.
This wine comes from grapes from Rodillana, Bobadilla del Campo and "El Sotillo", located in the province of Valladolid. A quarter of the clusters come from each of the first two vinyards and the remaining half from the latter.
The harvest takes place in September. Once in the winery, the grapes are destemmed and squeezed. Subsequently, maceration occurs for twelve hours at a controlled temperature of 10 degrees. Finally, the wine is fermented at 18 ° C in stainless steel.

The D.O. Rueda is a denomination spanning across Castilla y León, along the River Duero and its tributaries. It is mainly white wines that are produced in this D.O., and Verdejo grapes are by far the most popular variety. With hints of flowers, fruit, scrub herbs and very fine aromas, these grapes give the wine a very strong personality.
