Domaine Guillot-Broux Mâcon-Chardonnay Les Combettes is an organic, barrel-aged white wine made with the Chardonnay variety by Domaine Guillot-Broux in the French denomination AOC Mâcon, in Burgundy.
Domaine Guillot-Broux was founded in 1954 by Jean-Gérard Guillot and Jacqueline Broux, who became pioneers of organic viticulture. When Jean-Gérard passed away aged 63, his sons Emmanuel and Patrice continued his legacy and increased their land to 17 hectares. They now make very unique wines in different denominations.
Domaine Guillot-Broux Mâcon-Chardonnay Les Combettes comes from 1.5 ha of vineyard planted between 1991 and 1995. These strains are planted on clay and limestone soil with a very compact blue clay subsoil. The team use organic agriculture and biodynamic treatments, with the harvest carried out manually.
In the winery, the Domaine Guillot-Broux Mâcon-Chardonnay Les Combettes grapes are directly pressed and the resulting must is then transferred to stainless steel tanks where it undergoes alcoholic and malolactic fermentation. Finally the wine ages in oak barrels for 11 months.
