Working as a winemaker in Burgundy, Guillaume D'Angerville was impressed when he blind tasted a wine from the Jura region. That is when he decided to settle there and set up his own winery, Domaine du Pélican Arbois. He bought vineyards from veteran Jacques Puffeney, known as “the father of Arbois”, and began to make his own wines in a true Burgundy, non-oxidative style.
Domaine du Pélican Arbois 3 Cépages comes from vineyards where chemicals have not been used for a long time. These are healthy and unique terroirs with limestone and marl soil, cultivated using environment-friendly agriculture. The harvest is carried out manually at the optimum point of ripeness.
In the winery, the Domaine du Pélican Arbois 3 Cépages grapes are pressed and macerated at room temperature for one day. Fermentation then begins in stainless steel tanks with native yeasts at a controlled temperature. Finally, the wine ages in used French oak barrels for 12 months. Before bottling, the wine is stabilised and filtered.
Made with two of the local native varieties, Trousseau and Poulsard, Domaine du Pélican Arbois 3 Cépages is a true Arbois made in the most Burgundy style.
