Domaine des Roches Neuves Franc de Pied is a biodynamic and organic red wine made with the Cabernet Franc variety by Domaine des Roches in AOC Saumur-Champigny (Loire).
Domaine des Roches Neuves is Thierry Germain’s winery. He is a well-known winemaker with over 22 hectares of vineyards in the Saumur and Saumur Champigny denominations, in the Loire. These vineyards only grow two grape varieties (Cabernet Franc and Chenin) and since 2004 they have been cultivated using organic and biodynamic methods (Ecocert and Biodyvin certification). As a result, they create fruity, rich and radiant wines directly from exceptional terroirs.
The Domaine des Roches Neuves Franc de Pied name suggests that the vines growing the grapes used to make this wine have not been grafted. These vines are planted in 5-6 metres deep sand soil with limestone subsoil and cultivated using organic and biodynamic agriculture. No machinery is used in the vineyards, with tractors being replaced by horses. The harvest is carried out manually and placed in small boxes.
After passing over the selection table, the Domaine des Roches Neuves Franc de Pied whole clusters macerate for 8 to 10 days. Fermentation begins at a controlled temperature of 16 to 22ºC to extract the maximum aromas and fats. Fermentation ends at a temperature of 24ºC.
Domaine des Roches Neuves Franc de Pied is a good example of a great wine made by one of the leading biodynamic producers in France starting from a terroir with exceptional potential.
