Since 2014, the prestigious Domaine Des Lambrays winery has been owned by the French luxury group LVMH. And it is one of the most prestigious wine estates in Côte-d'Or (Burgundy). With the help of Boris Champy, a prestigious winemaker who previously worked at Louis Latour and Dominus, they produce very elegant wines using the Pinot Noir native variety.
Domaine des Lambrays Clos des Lambrays Grand Cru comes from an impressive terroir with Pinot Noir vines planted in calcareous clay soils with a high limestone content. They use respectful agriculture and no chemical products, working the vineyards with a horse and harvesting manually at the optimal point of ripeness.
In the winery, 85% of the Domaine des Lambrays Clos des Lambrays Grand Cru grapes are not destemmed and are left to macerate for a long time. Then fermentation begins spontaneously with native yeasts and the wine finally ages in barrels, 50% of which are new oak. When it is ready, the wine is bottled without refining or filtering.
