Characteristics of Domaine des Amiel À Elise
Domaine des Amiel À Elise is an organic and biodynamic white wine produced by Domaine des Amiel according to the philosophy of natural winemaking. It is a coupage of Vermentino with a little White Grenache.
Domaine des Amiel is a winery owned by two young brothers, Aymeric and Jordan Amiel, located in Languedoc-Roussillon. It is located in the small town of Montblac, between Narbonna and Montpellier. It cultivates its 10 hectares of vineyard certified organic and biodynamic. They work with the utmost respect for the vines and their natural environment, understanding that the wine is produced mainly in the vineyard.
The vineyards for Domaine des Amiel À Elise consist of young vines planted in 2010 and 2011. However, they produce quality grapes due to practices that limit their yield to 15-35 hectolitres per hectare. They are manually harvested into 10kg boxes so that the grapes can be selected in the field and to ensure the bunches arrive as intact as possible in the cellar.
To produce Domaine des Amiel À Elise, the bunches are pressed when they arrive in the cellar and the must is racked by gravity until it is clean. Fermentation then begins in tanks without adding commercial yeasts or sulphites. Halfway through the fermentation the wine is decanted into large 500 litre barrels, and once the fermentation is finished the wine stays there for a few months ageing on its lees. It is bottled in March without clarifying or filtering.
Domaine des Amiel À Elise is a very traditional natural white wine of which only about 1,800 bottles are produced per year. It is dedicated to Aymeric and Jordan’s great-grandmother Elise, whose dining room is now used as a barrel cellar. The sewing machine on the label symbolises the meticulous work and attention to detail they have sought to ensure in making this wine, as well as the relationships woven between generations, impossible without women.

Domaine des Amiel À Elise 2016 has a deep and slightly golden colour. The nose reveals aromas of ripe fruit and a great complexity. On the palate it is voluminous and creamy, and gives us a false sense of sweetness. Its finish is fresh and invigorating and needs a little time to open up.
