Domaine de Bellivière Calligramme Sec is a biodynamic white wine made by Domaine de Bellivière with the native Chenín variety in the AOP Jasnières denomination (Loire).
The Domaine de Bellivière winery was set up in the Loire Valley in 1995 by experts Christine and Eric Nicolas. This operation covers 13 hectares of vineyards in 5 different places (Lhomme, Ruillé sur Loir, Chahaignes, Marçon and Dissay sous Courcillon). That means the couple has a great wealth and variety of soils, cultivated using certified organic and biodynamic agriculture and that really know how to reveal their full splendour.
Domaine de Bellivière Calligramme Sec comes from old vines with an average of 50 years old. They are planted on slopes overlooking the Loire River on clay and limestone rock soil. They are treated using only natural products and biodynamic preparations. In the vineyard, the horse replaces the tractor and the yields are limited to 35 hectolitres per hectare. The grapes are harvested by hand.
The Domaine de Bellivière Calligramme Sec wine is spontaneously vinified with native yeasts in barrels. Aging takes place in 500-litre barrels for 20 months.
