Domaine Chandon de Briailles Corton Grand Cru is a biodynamic Chardonnay variety white wine made by Domaine Chandon de Briailles in the AOC Corton Grand Cru (Burgundy).
Although Domaine Chandon de Briailles dates back to 1834, it is currently owned by Claude de Nicolay's family. With a focus on biodynamic principles, this winemaker, along with his brother Francois, aims to reveal the excellence of a wonderful terroir with no frills. True to tradition, they have great respect for the native grape, nature and ancient techniques, combining these with modern winemaking practices.
Domaine Chandon de Briailles Corton Grand Cru is unusual in that it is made from Chardonnay vines planted in clay and limestone terroir, which are more often used for the Pinot Noir variety. Their meticulous cultivation involves the use of biodynamic treatments made from natural compost and herbs, steering away from any chemicals or products that might damage the environment. All work in the vineyard is manual.
In the winery, the Domaine Chandon de Briailles Corton Grand Cru grapes are pressed directly and the resulting must is stored in a settling tank for approximately 48 hours. Then begins the long and slow fermentation process in 200-litre barrels at a temperature below 22°C. It then ages in French oak barrels. Finally, the wine is separated from the lees by decantation and the wine is bottled without filtering or clarifying.
