Dom Pérignon Vintage 2008 is a champagne that offers an explosion of white flowers, citrus and stone fruits on the nose, complemented by nuances of anise and mint, and the spicy and roasted touches that aging brings. The entrance on the palate is timid but it then clearly emerges to reveal the notes from the nose. It has a sharp profile and surprisingly integrated acidity. It has a long and persistent finish accompanied by smoky nuances. A champagne that is definitely full of life, complex and bright, and from an exceptional vintage.
Sight
Pale yellow with golden reflections. Bright and clean. Fine and continuous chain of bubbles that forms a good crown on the surface. Nose
The intense floral notes appear first. Immediately, a surprising explosion of aromas of ripe fruit (apricot) almost tropical and citrus appear along with a wide range of nuts, bakery and yeast and some hints provided during the ageing such as the subtle smoky and toasty nuances. Complexity of aromas that are very elegantly presented.

It is intense and warm and fresh at the same time, its aromas are dominated by the notes of fruit that gradually give way to some hints of cream, nuts, spices,... In the background, a subtle and elegant bitter touch is perceived. Rich and opulent flavours, with a wonderful ending.
Sight
Gold with green hues. Nose
Nose: The nose first, fresh, crystal clear and firm, reveals an original universe, plants, water, a mixture of white pepper and gardenia. The maturity of the wine is then gently offers lightness and before we can feel its inflections peat. Taste
Mouth: The attack comes direct prelude to an extent which makes lewd and seems like a creeper vine. The notes of aniseed and ginger dry slide on the skin of a fruit (pear and mango) which touch more flesh. The finish is stretched and serene, calm, mature, diffuse.
