De Sol a Sol Airén is a white wine produced by Esencia Rural in Quero, Toledo.
Julián Ruiz Villanueva, raised by his father, a livestock breeder, and his mother, a farmer, left his hard country life when he was very young to go and study in Madrid. Years later, and Graduated in Social Studies, he returned to start his career in organic agriculture in an area where they were not familiar with these beliefs.
After planting organic melons and peppers, in 1998 he decided to try with organic wines. With 50 hectares of vines, most of them very old and even pre-phylloxera, he advocated for local varieties, Airén and Tinto Velasco, complemented with Tempranillo and Syrah. The philosophy of Esencia Rural is to make wines with minimum intervention, leaving the terroir and the variety to express themselves naturally, without filters or restraints.
De Sol a Sol Airén is a wine made from Airén that comes from a vineyard that is over 100 years old. It has 4.8 hectares, and it is planted on poor clay and limestone soils.
After manual harvesting, it is fermented in stainless steel deposits with local yeasts and goes through maceration with the skins for a year. Once the maceration has ended, it is left to stand with its fine lees for a couple of months, before it is bottled using the gravity method. Stabilisation is natural and it is not filtered. No sulphites are added during the entire winemaking process.
De Sol a Sol Airén is a dense, deep and fresh wine. Compote white fruit, honey and citrus hints stand out. A wine with a great personality, an authentic wine.
