Cume do Avia Colleita 7 Tinto is a red wine made by Cume do Avia with the Caíño Tinto, Brancellao, Souson and Merenzao varieties in the D.O. Ribeiro (Galicia).
Cume do Avia is run by Diego and Álvaro Diéguez, and Fito and Anxo Collarte; four cousins who decided to leave their professions to recover abandoned vineyards in Eiras do Mouros, their grandparents’ hometown. This is a family project, cultivating up to 14 local varieties that are vinified according to the ancient Galician tradition.
Cume do Avia Colleita 7 Tinto comes from old recovered vineyards. These vines are planted in granite soils and are ecologically cultivated with certification. Biodynamic treatments are used instead of chemicals. When the grapes reach optimum ripeness, they are manually harvested in small boxes.
In the winery, 40% of the Cume do Avia Colleita 7 Tinto grapes are not destemmed. Fermentation is spontaneous with native yeasts and the grapes macerate for a week in chestnut vats. Finally the wine ages in the same vats.
The result of an exciting and self-sustaining project, Cume do Avia Colleita 7 Tinto is a pure, authentic red wine with a great personality. A reunion with tradition.
