Characteristics of Cueva Joy
Cueva Joy is a natural rosé wine made in the D.O. Utiel-Requena (Valencia) by Bodegas Cuevas with the Macabeo and Tardana varieties.
Mariano Taberner, owner of Bodegas Cuevas, set up his project in a unique eighteenth century building in the heart of Utiel-Requena with the aim of producing natural wines that are completely faithful to the area their vines are planted. As a result, he makes small productions with their own personalities using artisan winemaking methods.
Cueva Joy comes from old vines planted in clay-calcareous soils. Under the certification and seals of the Valencian Community Organic Agriculture Committee, these vines are organically cultivated, respecting the environment and biodiversity. To do this, they use ancient, artisan practices and the harvest is not carried out until the grapes reach optimum ripeness.
In the winery, Cueva Joy is made naturally. First the grapes ferment with native yeasts, followed by blending with lees and then it is allowed to rest for 4 months in stainless steel tanks. The wine is not treated or filtered. However, they do follow the most modern bottling and labelling procedures to keep everything under control.
Cueva Joy is a rosé wine that preserves the ancient way of doing things. There are no additives used that could mask the characteristics of the grape itself. As the producer would say, a natural, artisan wine that you will enjoy.
