Characteristics of Coto de Hayas Viñas del Cierzo
Coto de Hayas Viñas del Cierzo is a red wine produced by Bodegas Aragonesas in the D.O. Campo de Borja. This wine is a blend of three different grape varieties: Garnacha (86%), Syrah (10%), and Mazuelo (4%).
The grapes used for Coto de Hayas Viñas del Cierzo grow on terraces on ferrous clay soils. The winemaking process is carried out using traditional methods. The vinification process begins with fermentation at controlled temperatures at controlled temperatures between 28º and 30º, followed by a maceration with the skins in tanks which lasts for a few weeks. Finally, Coto de Hayas Viñas del Cierzo undergoes a phase of malolactic fermentation.
After these various processes, the various grape varieties are blended. Coto de Hayas Viñas del Cierzo is then aged for 12 months in French oak barrels, before refining in the bottle.

For many years, Aragonese wines were used to strengthen weaker wines, both in Spain and abroad. The D.O Somontano region lead this revolution during the 90´s with the cultivation of foreign varieties, but now other wine regions, such as the DOCampo de Borja, have discovered the extraordinary possibilities of one of its native varieties: Grenache, one of the most prominent varieties in Spain. It is not in vain that the DO Campo de Borja is considered "the queen of Grenache".
The success of the wines of Bodegas Aragonesas is no coincidence. The restructuring and in many cases the preservation of our best vineyards allows them to obtain, in addition to one of the best garnachas market, the best musts for vinification of achieving a reliable quality.
