Characteristics of Cop de Cor
Cop de Cor is a white wine from the D.O Penedès region produced by the AT Roca winery as a collaboration with Vi per Vida. It is made using only Macabeo grapes.
The grapes used for Cop de Cor come from the Vinya Novellas estate, a vineyard that only grows Macabeo grapes. Planted in 1981 from old vine cuttings dating back to the early twentieth century, the vines grow on a clay and sand soils, containing limestone.
The harvest is carried out in two phases. Firstly, some of the grapes are harvested and crushed, then left in a bucket covered by a cloth in the middle of the plot. The rest of the grapes, however, are transported to the winery and pressed gently without being destemmed. After racking is performed 24 hours later, the must obtained is added the grapes harvested in the first phase.
Following this, all of the grapes are moved into french oak barrels that have a 300 litre capacity, where they undergo a second fermentation, followed by an ageing period of 8 weeks. During this period various battonages occur.
Cop de Cor is catalan for Heart Beat. This is a reference to feelings of intense emotion, a new beginning, love at first sight for example.
AT Roca is a winery directed by Agusti Torello Sibill and his son Agusti Torello Roca. They operate mostly in the D.O. Penedès region, but also in the D.O. Montsant.
Vi per Vida is a non-profit organization led by Xavier Alaya which aims to raise funds for research on cancer metastasis. The winery dedicates all collected benefits from the commercialization of Cop de Cor.

Today, the D.O Penedès is experimenting with viticulture and winemaking like no other region in Spain, home to a vast range of different grape varieties. The region is home to traditional white and red varieties, foreign ones, noble ones, permitted grapes, experimental grapes, and those that demostrate intrinsic qualities. As well as the grapes, the production techniques used are also worth noting, the location of the vineyards, the yields per hectare, the wines produced using traditional, original or even exclusive blends, the different ageing times, as well as the complexity of the different barrels used! But the reality is, given the vast diversity, it can be difficult to pinpoint what really defines a wine from Penedès, since there are so many types of wines and wineries in the region. However, the common denominator of all the wines from Penedès continues to be balance and quality.
