Characteristics of Come Queso y Bebe Vino
Come Queso y Bebe Vino is a wine from the Bienbebido collection produced by Castillo de Maetierra, made from 100% Tinta Fina grown on old vines that are very low in production in the Toro area, however are not a part of this D.O.
The Bienbebido was born when Vintae created the following challenge: to produce a different wine depending on the type of dish you are going to have, like chicken, beef, paella, cheese, pork, ham or octopus.
To achieve its purpose, they gathered various friends, some chefs, sommeliers and oenologists, that all come together to decide which were the best grapes or the best coupage for these plates.
In this case, cheese is suited to a powerful wine with a great fruit load and body.
This wine undergoes fermentation in cement deposits, but without reaching over 24ºC. It also undergoes malolactic fermentation in French oak barrels which are approximately 4 months old.
