Characteristics of Come Cerdo y Bebe Vino
Come Cerdo y Bebe Vino is a wine from the Bienbebido collection produced by Castillo de Maetierra, made from Tempranillo and Garnacha varieties.
The Bienbebido collection was the result of a challenge created by Vintae: to produce a different wine depending on the type of dish you are going to have, like chicken, beef, paella, cheese, pork, ham or octopus.
In order to achieve this challenge, they met several friends that included chefs, sommeliers and oenologists who all came together to decide which are the best grapes or the best coupage for these plates. In this case, pork is suited to a structured wine that is combined with a harmony of fruit and 18 months in the barrel.
This wine is produced in casks of 30,000 kg. Its fermentation takes place at a temperature of 28 ºC and its maceration is for two weeks. Afterwards it undergoes an aging in French and American oak barrels for 18 months, and finally it rests in the bottle for at least 6 months.
