Characteristics of Colegiata Blanco

Colegiata Blanco is a white wine from Toro produced by Bodegas Fariña.

This winery, founded in 1942, is one of the oldest in the region and is in Casaseca de las Chanas (Zamora), close to the city of Toro.

Colegiata Blancois a varietal Malvasia. The grapes come from 300 hectares of vineyards.

The vineyards support a continental climate with Atlantic influences. This type of climate is characterised by long, cold winters and a short hot summers. Besides this, there is a great thermal oscillation between the day and night.

All these conditions favour a good ripening of the grapes and an increase in the concentration of its aromas.

For the preparation of Colegiata Blanco, a traditional winemaking is made. After the harvest and de-stemming, maceration takes place cold at a temperature of 5 °C. After the maceration the must is fermented at a temperature of 15-18 ° C in stainless steel.
