Clot de les Soleres Chardonnay is a natural Chardonnay white wine produced by the Clot de les Soleres winery in the D.O. Penedès.
The Clot de les Soleres winery is an original 1880 rectangular building located in the town of Piera (Penedès). In 2001, Carles and Montse Mora revived the family winemaking tradition, in 2006 they started renovating the winery and in 2008 they produced their first natural wine. Their products are not made with unnecessary interventions or additives. Rather they are the result of biodynamic practices and are affordable for everyone.
A natural wine can only be a success by starting with a healthy and balanced grape. So the Clot de les Soleres Chardonnay vineyards use ecological and environmentally friendly agriculture to achieve a self-imposed limited but high-quality yield. No herbicides or chemical fertilisers are used. Moths are controlled using a sexual confusion technique, which avoids treatments, residues and contaminants. The harvest is carried out manually and at the optimum moment of grape ripeness.
In the winery, the grapes are pressed in the pneumatic press without being destemmed and the must racking is carried on a descending moon phase. The alcoholic fermentation of Clot de les Soleres Chardonnay is carried out at a controlled temperature of 15 to 18ºC in stainless steel tanks with native yeasts and without added sulphur. It is aged in stainless steel tanks on its fine lees for 5 months.
