Clos de l'Ecotard Les Pentes is an organic monovarietal Chenin Blanc white wine produced by Domaine Michel Chevré under the precepts of biodynamic agriculture, in the Loire, France.
Domaine Michel Chevré is a young winery in Saumur, in the Loire Valley, whose oenologist, Michel Chevré, is currently considered one of the best producers in the region thanks to the extraordinary Chenin Blanc wines he produces.
The vineyards for Michel Chevré are located on a hill of clay-calcareous soils facing south, in the village of Courchamps, where the plots are worked with horse-drawn ploughs and under the parameters of organic farming.
Clos de l'Ecotard Les Pentes comes from the production of Domaine Michel Chevré’s best vineyards, which are located on the slopes of the hill, where the Chenin Blanc expresses the highest concentration of its qualities. The harvest is carried out manually. Upon reaching the winery, the whole bunches are pressed slowly and the must obtained is fermented and aged for 12 months with its lees in French oak barrels.
