Chivete Colección 125 Blanco is an excellent white wine produced by the winery Bodega Chivete in the appellation of origin Navarra.
The 125 series began in 1985 in commemoration of the 125th anniversary of the the first exports from the winery, which took place in 1860.
Chivite Colleción 125 Blanco is a monovarietal produced from the varietal Chardonnay, the grapes originate from vines planted on slopes on the Granja Legardeta, in the municipal of Navarro de Villatuerta. The soils are rich in clay and chalk sediments.
The harvest is completed by hand and undertakes a selection process in the winery before being destemmed.
The grapes are cold macerated for 6-8 hours, it pressed by a pneumatic press, and is then racked before initiating the fermentation process, remaining there for 3 weeks in a stainless steel container at a controlled temperature constantly below 27ºC.
Chivite Colección 125 Blanco is placed into French oak barrels for 11 months and left to lie on its lees with daily battonages.
Once the ageing process is finalised, it is filtered and then later bottled and left to rest for a few months before its release on the market.
