Characteristics of Celler Vell Cuvée Les Solanes Brut Nature
Celler Vell Cuvée Les Solanes Brut Nature is a cava brut nature from the Cava region produced by Celler Vell. This cava is a blend of 3 varieties: Xarel.lo (33%), Chardonnay (33%) and Pinot Noir (33%).
The grapes used to make Celler Vell Cuvée Les Solanes Brut Nature are grown on plots of vineyards that are owned by the winery. The grapes are first selected at the vineyard before passing through a selection table at the winery.
Once in the winery, both the Xarel.lo and Chardonnay grapes ferment independently in french oak barrels from Allier that have a 300 litres capacity. The Pinot Noir grapes will be added to the blend later.
The must of Celler Vell Cuvée Les Solanes Brut Nature undergoes several battonages, a process where the lees are stirred in order to obtain a finer, more volumnus wine. After, it rests for a period of 6-8 months.
After the 3 varieties have been blended and bottled, Celler Vell Cuvée Les Solanes Brut Nature ages for 2 more years in the bottle to finish rounding out.
Celler Vell is family company that produces artesan cavas. The grapes come exclusively from their estates.
Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
