Castello dei Rampolla is a winery located in the "Conca d'Oro" of Panzano, in Chianti. It is a castle that has belonged to the Di Napoli family since 1739, but it was not until the mid-1970s that they began to make wines on the property. From the outset, the winery has been committed to respecting the land and promoting the biodiversity of its territory, and thus has been a pioneer among Italian wineries in cultivating its vineyards biodynamically, which it has done since 1994. Castello dei Rampolla produces wines of great quality and enjoys the invaluable collaboration of the prestigious wine consultant Giacomo Tachis.
The vineyards for Castello dei Rampolla Sammarco have calcareous soils and rocky marls. The plots are harvested by hand to respect the grapes as much as possible and allow them to reach the winery whole.
Castello dei Rampolla Sammarco is fermented without using commercial yeasts, due to the action of the yeasts present on the grapes, the native yeasts. Fermentation takes place in cement tanks in which the must remains for 3 months. Lastly, it is first of all refined for 12 to 15 months in oak barrels and in 15 hectolitre casks, and subsequently for 18 to 24 months in the bottle before going onto the market.
