Castello Bonomi Cuvée 22 is a sparkling wine made by Castello Bonomi in the DOCG Franciacorta with the Chardonnay and Pinot Noir varieties.
Castello Bonomi is located on the slopes of Mount Orfano, on the southwest coast of the Franciacorta denomination. Surrounded by a beautiful building designed by the architect Antonio Tagliaferri at the end of the 19th century, the entire estate is run by the Paladin family. This family transformed the estate into a dynamic business, where wines are made using traditional methods.
Castello Bonomi Cuvée 22 comes from a special selection of grapes from 20 large crus located in the Franciacorta denomination. These are vines with an average age of 15 years old planted at a density of 5,500 strains per hectare. They practice traditional agriculture, respecting the environment and the terroir as much as possible. The harvest is carried out at the optimum point of ripeness.
After the Castello Bonomi Cuvée 22 grapes are gently pressed, they are vinified through fermentation at an approximate temperature of 14°C in stainless steel tanks and in small oak barrels. It then ages for approximately 8 months at a controlled temperature until the cuvée is prepared. After the second fermentation in the bottle, it ages for at least 30 months before disgorgement and then refines for a few more months in the bottle.
Castello Bonomi Cuvée 22 is an eclectic and fresh sparkling wine that gives off the full Franciacorta complexity.
