Characteristics of Castell Sant Antoni Torre De L'Homenatge

Torre de l´Homenatge is a cava gran reserva brut nature from the Cava region produced by Castell Sant Antoni. It is a blend of 3 different grape varieties: Xarel.lo (50%), Macabeo (25%) and Parellada (25%).

The grapes used to make Torre de l’Homenatge come from the wineries own vineyards, the majority of which are located on the family estate El Sot, in Sant Sadurní d’Anoia, and spans 4 hectares. The microclimate of the are is ideal for the vineyard, from which there are enviable views.

The different varieties used for Torre de l’Homenatge undergo the first stage of fermentation independently. After the first fermentation, the three varieties are blended.

The second fermentation follows a conventional method, which takes place in the bottle, where the must rests for 120 months. Finally, after disgorging and labelling the bottle: Torre de l’Homenatge is ready to enjoy.

Castell Sant Atoni is one of the many wineries that you will find in the historical locality of Sant Sadurní d’Anoia. The secret to their cavas is the expression, patience and finesse.

Winery Castell Sant Antoni

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
