Characteristics of Caorunn Gin
Caorunn is an artisanal gin made in small batches at the Balmenach distillery. Pure Scottish water from neighbouring springs is used in its production. Traditional Celtic ingredients and pure grain alcohol are used instead of the usual molasses.
The grain is vaporised in a copper still from the 1920s with a capacity of four trays. The botanicals are placed on top of these trays, allowing them to fuse with the grain alcohol, adding their distinctive flavour and aroma.
The botanicals used in this recipe are: juniper, coriander, lemon and orange rind, angelica root and cassia bark. Celtic ingredients like heather, dandelion, myrtle, ash berries and coul blush apple are also added. To highlight this gin's refreshing flavour, we recommend serving it with a slice of red apple.
