Cantina Margò Bianco Fiero is a natural Grechetto white wine produced by Cantina Margò in the IGP Umbria.
Carlo Tabbarini started Cantina Margò in San Enea and San Nicolo di Celle, near the city of Perugia. To begin with, he only had a small vineyard sitting 350 metres above sea level. Using the most natural approach, he is living out his passion for winemaking in the same region where his father and grandfather used to cultivate vineyards. He uses ecological and biodynamic practices both in the vineyard and in the winery to capture the maximum expression of the terroir in a transparent and simple way.
The vineyards used to make Cantina Margò Bianco Fiero are treated in the most natural way possible. These are 20 to 45 year old strains planted in soils composed of clay and loam, facing southeast. As well as using biodynamic preparations made with manure and plants, algae and natural sulphur are also used to protect the strains. All work is carried out manually using as little machinery as possible and the grapes are harvested by hand.
The Cantina Margò Bianco Fiero grapes are left to macerate for 2 to 6 days. Fermentation takes place with native yeasts and without controlling the temperature. 10% of the wine ages in stainless steel tanks for 3 months. Finally, it is bottled without clarifying or filtering.
