Cañada París 2017 is a white wine made from the local Merseguera variety that the Bodega Baldovar 923 produces in the province of Valencia.
Baldovar 923 is a winery located in the mountain town of Baldovar (Valencia) whose main challenge is to produce quality grapes with minimal intervention. To do so, the first step was to convert its vineyards with their old vines to organic viticulture; a task that has allowed it to bring high quality wines to the market, ready to enjoy.
These strains, with an age of between 20 and 60 years, are planted at an altitude of between 900 and 1,200 above the sea. It has an upland continental climate and a calcareous soil with a sandy-loam texture, conditions that, together with the application of organic and biodynamic techniques, make Cañada París a pure reflection of the typical character of a terroir. The grapes are harvested manually into boxes.
In the winery they are selected, destemmed, crushed and gently pressed. It is then racked for 24-48 hours at a temperature of 8ºC without adding any oenological component, and is fermented with native yeasts. The ageing takes place for 9 months - 30% in clay amphora, 10% in French oak barrels and the rest in stainless steel tanks.
