Callejuela Amontillado is a fortified wine from Jerez produced by Callejuela in Sanlúcar de Barrameda, Cádiz.
Callejuela was founded in 1980 by Francisco Romero Blanco. He started producing musts in a few small facilities and selling them to the large wineries of the area. Nowadays, they have 28 hectares of vineyards and 700 oak barrels where the wines are aged. Their main philosophy is centred on the vineyard: for wine to age well, it needs a good grape.Callejuela Amontillado is produced with the Palomino Fino grapes from their own vineyards. After obtaining the must, it is aged under the Soleras and Criaderas system for 12 years. During this time, it has had two types of ageing, one under a film of ‘flor’ yeast and the other, oxidative ageing, which gives the wine a greater complexity
