Bories Jefféries La Cabane de Jeanne is a natural white wine made with White Grenache, Grey Grenache , Marsanne, White Terret and Grey Terret. It is a wine from the Languedoc-Roussillon area produced by the Domaine Boires Jefféries winery.
Domaine Boires Jefféries is a small winery owned by Jo Jefferies, an Englishman who settled in Languedoc a long time ago. The winery farms its vineyards organically and describes its wines as "homemade". It produces few bottles annually, in order to remain true to its values. Jo Jefferies has been inspired by friends like Bernard Bellashen and Rémi Poujol.
To produce Bories Jefféries La Cabane de Jeanne the Marsanne grapes macerate for 9 days but the others are pressed directly on arriving at the winery to extract their must. The fermentation begins spontaneously, with native yeasts and not added ones, and the final wine is aged on lees for 11 months and bottled with no added sulphites.
Bories Jefféries La Cabane de Jeanne is a natural white wine with ageing on lees that is a coupage of varieties that have adapted very well to the Languedoc.
