Characteristics of Auditori
Auditori is a red wine produced by the Acústic winery in the Monstant region, situated in the province of Tarragona.
Acústic is a modern winery, founded in 2003. However the founder, Albert Jané, is the third generation of a family who have been linked to viticulture and wine production since 1914 in the Penedès region.
The name Acústic is a musical analogy that perfectly reflects the wines of this winery. Acoustic music, with no electricity, is pure. Just like their wines. Pure wines, with minimal production and great expression.
Auditori is produced only using grapes of the Garnacha variey, taken from old vines, aged beween 60-70 years, located on 3 small estates. The vineyards are planted in poor soils composed of rocks, sands, clays, slate and boulders. These poor and diverse soils provide a special finesse and elegance to the wine.
The production of Auditori begins with the maceration of the must for 15 days before fermentation. The wine is the aged for a period of 13 months in lighty toasted french oak barrels.
After this, Auditori is neither filtered nor clarified in order to maximise the expression of the Grenanche grapes.
This is an authentic wine from Monstant, with expression and alot of personality.

The DO Montsant is situated in the province of Tarragona, surrounding the DOQ Priorat. Although a young Denominación de Origen, The DO Monstant is located in a land with a large history in winemaking. The wines, mostly reds, are typically made with Grenache and Carignan grapes and are authentic, wild and artisanal. Wines produced in this region are usually extremely good value given the high quality.
Acústic Celler is the personal project of Albert Jané, a young man born in El Vendrell, and whose great-grandfather founded a family-owned wine cellar in the Baix Penedès in 1914. Here, he began to market wines in bulk, and he continued his activity until, in 1985, Benjamí Jané, Albert's father, gave the winery its final boost. He redirected the business, created the brand Jané Ventura and began to bottle his wines. In 1990 the cava would arrive, and in 1991 the red wine, but his objective was always to produce wines that transmitted the affection that the Jané family has for their land. This is the philosophy that Albert Jané applies. He strictly complies with it, with the local varieties of Grenache and Carignan in D.O. Montsant.
