Characteristics of Atrevit
Atrevit is an ecological rose wine from DO Penedès produced by the Can Descregut winery. This wine is a varietal Merlot.
Atrevit comes from organic farming certified by the Catalan Council of Ecological Agricultural Producction (CCPA) which seeks to prioritise biodiversity and the environment. The vines, owned by the winery, are treated without herbicides or insecticides.
The harvest is done at night so that the grapes turn into wine at low temperature, thus slowing the alcoholic fermentation and obtaining a greater extraction of aromas. Pulp maceration takes about 15 hours and also occurs at low temperatures.
The subsequent fermentation takes place in stainless steel tanks for 20 days at constant temperature. One tartaric stabilization and mild filtrate was subsequently performed.

Today, the D.O Penedès is experimenting with viticulture and winemaking like no other region in Spain, home to a vast range of different grape varieties. The region is home to traditional white and red varieties, foreign ones, noble ones, permitted grapes, experimental grapes, and those that demostrate intrinsic qualities. As well as the grapes, the production techniques used are also worth noting, the location of the vineyards, the yields per hectare, the wines produced using traditional, original or even exclusive blends, the different ageing times, as well as the complexity of the different barrels used!
